Making Martabak

Martabak is an Indonesian crepe made with curried ground beef, eggs and onions sandwiched between crispy egg roll sheets. Sold on the streets of Jakarta by food vendors, it's been a childhood favorite snack of mine. This June, I held a class to share this wonderful, exotic recipe with others. Seafood from Down Under

I recently came back from a trip to Australia. While I was prepared to live on a steady diet of fish & chips, much to my delight I found eateries with a broad array of dishes from all over the world, especially Asia. My most stellar experience was lunch time at the Sydney Fish Market, which attracts about three million visitors annually. Here are some photos from my three Fish Market adventures.

When is a  bug not an insect? When it's a Balmain bug -- a crustacean native to the coast of eastern Australia. These shellfish are sweet and delicious and taste like a cross between a shrimp and a lobster. We had ours Chinese style with a bit of garlic-ginger sauce. So savory.

In Japan, uni  (sea urchin) is considered a delicacy. The fresh uni at the Sydney Fish Market beckon with their luster and are hard to resist. This showcase sea urchin is served still in its spiny shell. So yummy!

Fresh scallops are so delicate and delicious however they are served.

With some many choices of seafood, platters are great ways to try different types. But these platters are huge and need lots of eaters. That's why the fish market is always crowded. People come in large groups of families and friends.

So many types of sushi, all beautifully displayed. But who ever heard of a sushi donut? A Sydney original for sure.

For dessert we made our way to the produce market and discovered what is now our favorite mangoes in the world: Kensington Pride (aka Bowen) mangoes. Their aroma is so fragrant and the flesh so smooth and sweet. A perfect palette cleanser after a fisherman's lunch.

Blueberry Paradise

​This year we are blessed with a bumper crop of blueberries. We've made preserves; freezer bags for the winter; cakes, crisps and blueberry-rhubarb bars; and we've given away lots to friends. And we're still picking. But of all the delectables we make, our favorite is SurTam Blueberry Muffins. Here's our foolproof recipe that uses a mix of flours. A great way to start the day.

SurTam Blueberry Muffins

​Flour Mix
¼ cup kamut
¼ cup spelt
½ cup oatmeal
½ cup cornmeal
½ cup gluten-free flour
2 tsp baking powder
½ tsp salt
1 T ground flax seed
1 T lemon zest
Other Ingredients
½ cup softened butter 
      (or ¼ olive oil & ¼ cup softened butter)
¾ cup sugar
an amount of stevia to substitute for ½ cup sugar
​       according to manufacturer's measurements

2 eggs
½ cup milk (lactose-free whole milk is OK)
2½ cups blueberries 

​Directions
  1. Wash and dry the blueberries. (Can be done the night before.)
  2. Combine all the ingredients for the flour mix in a mixing bowl.
  3. Take 2 tsp of the flour mix and combine with blueberries. Set aside.
  4. In a separate mixing bowl, cream together the butter, sugar and stevia.
  5. Add the milk and eggs to the sugar mixture.
  6. Stir in the flour mix.
  7. Line muffin tins with paper muffin cups and spoon in the muffin mixture.
  8. Bake at 350 degrees for 20 minutes. Yield: 14 muffins
